Because, in canon, Charlie explicitly says she does not like men. (There’s the whole issue of Cas is only male because his vessel is, but that’s a whole other can of worms).
In the show, it is never explicitly stated that Dean is straight, so why can’t he be bi? Because we’ve only seen him sleep with women? That doesn’t mean anything- plenty of people don’t come out or act on their feelings until much later in life; some never do, for various reasons.

Funnily enough, Dean explicitly says he does not like men either. MULTIPLE TIMES.

And these are just the ones I could remember the wording well enough to find. He’s said it other times as well. This isn’t just him saying “I’m into women” either. He’s specifically saying he’s not into men. He even said most of these when he was not around someone he knew, so you can’t even claim he said it to protect his image.
Why are you willing to take Charlie at her word, but not Dean at his? That’s a double standard if ever I saw one.
